The winning dish of Daniele Fagiolini at the Pisana Catering Award 2013 Edition
An interesting fusion between tradition and innovation, realized through this “Crispy Ravioli Stuffed With Mallegato on the Cream of Tuscan Pecorino”. A well-matched combination of balance and flavors. The “Pisana Catering Award” has reached its 11th edition this year. In the setting of the Palazzodei Dodici, the first prize (a chopping board of alabaster specially engraved by the alabaster masters of Volterra) went to the Antico Ristoro Le Colombaie di San Miniato represented by the owner Daniele Fagiolini. Twelve restaurants were challenged with a dish and its wine pairing, all strictly local.
The award ceremony, held on November 14th at 15.00 in the Palazzo dei Dodici in Piazza dei Cavalieri in Pisa, was preceded by a seminar on the truffle, organized in collaboration with the food and wine group “Io cucino il territorio”. Participants, among others, included Donato Creti, one of the best known technical experts on aromas in Europe and Dr. Luisa De Risi, nutritionist, who were invited to express their opinions on truffles in food.
